NAKED CHICKEN ENCHILADAS
There's been a lot of requests for this one and we love it too! So here it is - naked chicken enchiladas. Pieces of lean chicken breast cooked with Mexican spices, corn, red capsicum and black beans covered with a vibrant tomato enchilada sauce and topped with shredded melting cheese. Served with carrot batons, roast red capsicum and either brown rice or cauliflower rice as a lower carb option.
